This moist banana bread is made with very ripe bananas, butter, sugar, eggs, and vanilla, with toasted walnuts and sweet raisins folded into the batter. Bake until golden and a toothpick inserted into the center comes out clean.

Ingredients

Scale
  • 3 very ripe bananas, medium/large, about 1 1/2 cups mashed
  • 1/2 cup unsalted butter (8 Tbsp), at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 1 cup walnuts
  • 1/2 cup raisins

Instructions

  1. Preheat the oven to 350°F. Grease and flour a bread loaf pan measuring 9.25 inches long × 5.25 inches wide × 2.75 inches deep.
  2. Lightly roast the walnuts in a skillet, stirring continuously so they do not burn. Coarsely chop the walnuts and let them cool to room temperature.
  3. In a mixing bowl, cream together the softened butter and 3/4 cup sugar.
  4. Mash the bananas with a fork until they have the consistency of chunky applesauce. Add them to the batter along with the 2 eggs, mixing until blended.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the batter.
  6. Add the vanilla extract, chopped walnuts, and raisins. Mix to combine.
  7. Pour the batter into the prepared loaf pan. Bake at 350°F for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the banana bread rest for 10 minutes before transferring it to a wire rack to cool.

Notes

  • Use very ripe bananas: The recipe calls for 3 medium/large bananas, about 1 1/2 cups mashed.
  • Toast the walnuts carefully: Stir continuously while roasting to prevent burning, then cool and chop them before adding.
  • Check for doneness: Bake for 55–60 minutes, until a toothpick inserted into the center comes out clean.
  • Cool before slicing: Rest the loaf in the pan for 10 minutes, then transfer it to a wire rack to cool.
