Ingredients

Scale

Sauce

  • 1/4 cup vegetable broth
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil

Lo Mein

  • 8 oz lo mein noodles (cooked according to package instructions)
  • 1 large carrot, julienne
  • 1 cup broccoli, chopped
  • 1 large red bell pepper, sliced
  • 1 medium onion, sliced
  • 4 garlic cloves
  • 1 tbsp oil for frying

Instructions

  1. Make the sauce: In a bowl, combine the vegetable broth, brown sugar, sesame oil, and soy sauce. Whisk until everything comes together. Set aside.
  2. Cook the vegetables: In a preheated skillet with oil, fry the carrots until golden brown. Remove and set aside. Repeat this with the onions, broccoli, and bell peppers. Cooking the vegetables separately creates the best flavors.
  3. Add the garlic: Add all vegetables back to the skillet. Press the garlic into the vegetables and toss everything together.
  4. Combine: Add the lo mein noodles and sauce. Toss together and let the lo mein cook for 3-5 minutes.
  5. Remove from the heat and serve right away.

Notes

Cook the lo mein noodles according to the package instructions before adding them to the skillet. Cooking the vegetables separately helps develop their flavor. Serve immediately after tossing the noodles with the sauce.
