This comforting Creamy Sausage Corn Chowder is a hearty one-pot meal made with Italian turkey sausage, sweet corn, tender potatoes, and cream cheese. This creamy, flavorful stovetop soup is perfect for a cozy family dinner and uses halal-certified turkey sausage for a halal-friendly option.

Ingredients

Scale
  • 1 pound Italian turkey sausage, casing removed
  • 1/2 cup red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups chicken broth
  • 8 ounces cream cheese, softened
  • 16 ounces frozen corn kernels
  • 1 pound russet potatoes, diced into 1/4-inch cubes
  • Green onions, chopped for garnish

Instructions

  1. Brown the sausage: Place a large Dutch oven or soup pot over medium-high heat. Add the Italian turkey sausage and cook until browned, breaking it apart with a wooden spoon. Drain most of the excess drippings, leaving enough to cook the vegetables.
  2. Sauté the aromatics: Add the diced red bell pepper, onion, garlic, parsley, thyme, paprika, salt, and black pepper. Sauté for 3–4 minutes, until the onions turn translucent and the peppers soften.
  3. Build the creamy base: Pour in the chicken broth and add the softened cream cheese. Bring the liquid to a boil, stirring to help the cream cheese melt into the broth.
  4. Simmer the vegetables: Add the diced potatoes and frozen corn. Reduce the heat and simmer for 25–35 minutes, until the potatoes are fork-tender.
  5. Blend for texture: Remove about 3 cups of soup and blend until smooth. Return the blended mixture to the pot and stir to thicken the chowder.
  6. Garnish and serve: Ladle into bowls and garnish with chopped green onions just before serving.

Notes

  • Use Italian turkey sausage that is certified halal for a halal-friendly version.
  • For a leaner option, use extra-lean turkey sausage.
  • Dice the potatoes into uniform 1/4-inch cubes so they cook evenly.
  • Use an immersion blender directly in the pot to reduce cleanup.
  • For a thicker chowder, blend an additional cup of soup or mash a few cooked potatoes against the side of the pot.
  • Garnish with fresh chopped green onions just before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
