Loaded Baked Potato Dip

Ingredients:

1. 16 ounces sour cream

2. 16 slices (12-ounce package) bacon, cooked and crumbled

3. 8 ounces sharp cheddar cheese, shredded (about 2 cups)

4. 1/3 cup thinly sliced scallions or chives

Directions:

1. Mix all ingredients in a bowl and keep cold for at least one hour before serving to let flavors to meld together.

2. Decorate with extra shredded cheese, crumbled bacon, and chopped chives.

3. Serve with your favorite potato chips or pretzel crisps.

4. Dip can be stored in an airtight pot in the refrigerator for up to 1 week.

 

Chunky HOT Tomato Salsa

Ingredients:

800 g canned tomatoes
3 chilies
1 green pepper
2 jalapenos
1 small red onion
1/4 cup vinegar
1 teaspoon garlic powder
1 teaspoon paprika

Directions:

1. Chop all the ingredients in chunky pieces and add them together with the vinegar and spices to a saucepan. Do not throw away the tomato juice from the can!

2. Add the spices and bring the salsa to boil at medium heat. Afterwards simmer for about 45 minutes to an hour. Finish tasting if necessary.

3. Transfer to a jar and let it cool completely. Enjoy!


Bloody Mary with Shrimp

Ingredients

  • 22 ounces reduced-sodium V8
  • 1 teaspoon horseradish
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 10 dashes Tabasco
  • Freshly ground pepper, to taste
  • 3 ounces vodka, optional
  • Ice cubes
  • 4 cooked shrimp

Preparation

  1. Shake V8, horseradish, Worcestershire sauce, lemon juice, Tabasco, pepper and vodka, if using, in a large glass jar with a tight-fitting lid.
  2. Fill 2 glasses with ice and divide the Bloody Mary between the glasses.
  3. Garnish each drink with 2 shrimp.
  4. Serve cold
